• Lagniappe Today Food Truck, The Trinity

    My kitchen memories began very early, I was probably eight years old when I started prepping in my mom’s kitchen. I remember chopping, chopping and more chopping to prepare dinners. Unbeknownst to me I was prepping the “trinity”.

    No, I’m talking about the Holy Trinity, I’m talking about the ”cooking trinity” which consist of fresh onions, bell peppers, and celery. These three vegetables are the most important ingredients in Creole and Cajun traditional recipes. Maybe I should call it the trinity+1 since there is one special ingredient that I always use.... “garlic”.

    These fresh ingredients are used in the Lagniappe Today’s gumbo, jambalaya, chicken Creole, red beans, and etouffee.

    I could go on forever but I think you get it, just like I got it, the “trinity” puts the authentic in Louisiana cuisine. Other popular herbs and spices used in my dishes are fresh parsley, chives, bay leaves and other aromatic and flavorful garnishes. But the trinity is the number one, two and three ingredients that are used to make Lagniappe Today an Authentic Louisiana Cuisine food truck.

    And yes I still chop, chop, chop……

     

  • Po-Boy Fridays San Antonio Food Truck Style

    For the past month and a half , the Lagniappe Today Food Truck has been serving San Antonio great Authentic Luisiana Cuisine . The soul of the our San Antoniio Food Truck is an 18 foot kitchen with a 72" stove. The heart of this new Food Truck is Suzanne and Joseph Jackson, the owners and chefs. Lagniappe (LAN-yap) means "a little something special for you". The "little something special for you" on Fridays is now Po Boys.   • Food Truck Grand Opening San Antonio Mardi Gras Style

    We are excited to announce the Grand Opening of the Lagniappe Today (LAN-yap) Food Truck at Boardwalk on Bulverde in San Antonio.
    Our Mardi Gras Grand Opening Celebration will be Feb 16 - 19 and Fat Tuesday Feb. 21 at Boardwalk on Bulverde, 14732 Bulverde Road.

    Come on out and join the Lagniappe Today food truck for a Mardi Gras Celebration that will include great Authentic Louisiana Cuisine,  jazz music, beads and some great LOUISIANA STYLE FUN . Come sip Cafe Du Monde Coffe and eat a Beignet and enjoy a beautiful San Antonio morning with great jazz music. Lagniappe Today Food Truck is one of the newest food trucks in San Antonio serving authentic Louisiana Cuisine.

    Boardwalk on Bulverde (14732 Bulverde Road San Antonio, TX 78247) is San Antonio's first food truck park and offers a vast array of original food. The Sunday Jazz Brunch will be followed by lunch served from 12:30 - 2:30.

    Suzanne And Joseph Jackson Lagniappe Today Food TruckOwnersOh wow! My social media guru son told me to write a blog, so far all the work he has done on our Lagniappe Today Social Media sites seems to be connecting with the customers through, facebook fan page, website and twitter so who am I to complain I’ll write a blog.

    OK, now my blog. The food truck business is awesome, we (Mr. J and I) started this idea just a few short months ago August 2011 to be exact and we opened Lagniappe Today Food Truck on January 12, 2012. We call it our ENCORE we both realized that we wanted a change, a business that would offer us an alternative work environment, control of our time, fun and excitement. We did not know a lot about the Food Truck Business, but that only lasted a short minute…..Thank goodness for internet Google!

    Of course we did not do this without some help and support from great people and businesses.

    I would like to thank the team of people who helped make our dream become a reality Cameron Davies, Cruising Kitchens & his team, Mike Haddock & Brad Meley from Firstmark Credit Union, Richard Sifuentes, Small Business Development Center UTSA, Gylon Jackson, Big G LABs (social media guy & our #1 son) and a very special person Stephanie Mitchell the artist who designed the wrap. Marissa & Matt Hoover our beautiful LA daughter and wonderful son-in-law who listened and supported us with great ideas and encouragement. And the endless groups of friends & family who participated in our recipe tastings. A special shout out to Erica, Vito & Martha, Belinda, Beverly & Cliff, Gwen & Ernie, Karen & Northon, Charles & Barbara and Robert & Carmen. My very special thanks goes out to my dear sister Jennifer Smith who passed away on December 11th we talked endless hours about how to prepare food and the plans for Lagniappe Today. I miss you and just to let you know we have JA JA Jambalaya on the menu.

    Our kitchen became the test kitchen and not a day went by that we were not talking about or eating a new or improved dish.

    We did not enter this venture blindly. Mr. J (my dear husband of 40 years) is a career restaurateur and I am a person who loves to cook and watch people eat, smile and ask for more. Making great food, serving generous flavorful portions is our passion. Why Louisiana Cuisine, because that is the food that we grew up eating, our parents, grandmothers and all of our Louisiana relatives cooked Louisiana Cuisine. It’s great food that it is savory, comforting and just dang good.

    We are introducing San Antonio to a Lagniappe Today Food Truck recreation of the southern cuisine favorite, Chicken and Waffles.

    Chicken Tenders double dipped and fried to a crispy golden brown, served with specially flavored waffles stixs. Dipping these stixs and tenders in syrup, cayenne pepper cane syrup, or a creole sauce will be a novel gastronomic experience for you.
